The ingredients needed to prepare Gateaux Basque:
  1. Use 250 g plain flour
  2. Prepare 200 g caster sugar
  3. Get 150 g unsalted butter
  4. Take zest of one lemon
  5. Take zest of one orange
  6. Get 1 egg
  7. Get 1/2 tsp almond extract
  8. Take 1 tsp baking powder
  9. Take 2 tbsp fruit preserves
  10. You need 1 tsp icing sugar for decoration
Instructions to make Gateaux Basque:
  1. Put the flour, sugar, butter, baking powder and zests and mix in a food processor until it becomes crumbly
  2. Next, add the egg and almond extract and continue to gently mix until it becomes doughy
  3. Split into 2 equal parts and put one in the fridge to chill
  4. Press the remaining ball of dough evenly into a greased cake tin to form the base
  5. Then spread your fruit preserves around the center. I used strawberry jam here
  6. Retrieve the chilled ball of dough from the fridge and carefully roll out into a circle the will fit on top of your base. Add a bit of flour here to stop things sticking
  7. Place the rolled dough on top of the base, then trim any leftovers and press the edges to seal
  8. Put in the 200C oven for 15-20 mins or until browned
  9. Allow to fully cool then sprinkle some icing sugar over the top and serve
